1 minute muffin it is!

Thanks to Lori for telling me about the 1 minute muffin.  I googled it and kind of fudged up this recipe:

Mix all ingredients together, microwave for 1 minute.  It had a texture like bread.  Oh, I may have a pumpkin muffin tonight 😉  I did forget my flax in my oats again this morning.  This isn’t on my meal plan.  The macros fit so i’m going with it.

It turned out lovely!

 Are you good at making new friends?  I’ve always been a shy person and lacked confidence.  I must say that I do make friends easily.  Maybe that is stretching the truth.  I make acquaintances easy.  I am easy to get along with for the most part.  The new people I work with already like me 🙂

    • Flax meal should work. Lori said sometimes she replaces almond flour for flax.

      I put it in my shakes, pudding and oatmeal. Sometimes I sprinkle it on salads.
