Peanut Butter Cookies

I made these from the Oxygen magazine recipe the other day.  They are awesome!  Serving is 2 and believe me…they fill you up.

  • 1 ½ cups ANPB crunchy
  • 1 ½ scoops of chocolate protein powder
  • 1 egg
  • ½ cup of sucanat
  • ½ cup almond flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Mix together.  Roll into 16-20 balls.  Bake for 12 mins.

    I’m new to subject of clean food and really don’t know what is the SUCATANT? I tried to find on goole but I couldn’t find any explanation what’s that????

    • No problem..it’s sugar cane in its natural state. It can be found at most health food store. It’s got the flavor of brown sugar.

    • I’ve heard flax meal can replace egg whites…i’m sure YOU already know this 😉

    gorgeous! PB Cookies were my FAVE as a kid! Pardon my ignorance what is sucatant ?? is it like splenda or is it like a bonding agent ??

    • It’s just natural sugar cane. It tastes like brown sugar.

  6. I saw this & want to try it but want to modify for a bit less fat calories…. They looked sooooooo yummy! I was wondering if I could replace the sucatant with something else…. I also see they don’t quite look like the pic in the mag… I was wondering about that….

    • The sucatant is wonderful 🙂 That’s not a picture of the actual cookie. I made the others tonight that are in the mag. I liked them better. Just almond butter, sucatant, egg, baking powder and carob chips for mine. I did take a real picture of them 🙂 I’ll post it soon
